Latymer Restaurant at Pennyhill Park Hotel has signalled the start of a new era for this luxury 5 star hotel resort.  Over the 4 decades’ its been operating as a hotel, its’ received an army of awards for it’s amazing amenities and facilities.  The hotel’s restaurant, part of the leading luxury group of UK Hotels’ Exclusive Collection, has now been credited with a star entry into the Michelin Guide.  Headed by Masterchef winner – Head Chef Steve Smith is considered to be an extremely innovative and groundbreaking chef, and has notably received a Michelin star at every restaurant he has worked in.

Set in acres of grounds; this impressive Bagshot resort combines the charm and character of it’s main facade, with newer lodges that have been tastefully enhanced to compliment the original main stone and oak beamed building; with it’s luxurious interiors.   The newer lodges are scattered around the landscaped gardens, pool and spa; but still manage to not detract from the original features.

The Latymer restaurant; which has taken this hotel beyond the realms of its’ longstanding 5 star luxury status – and catapulted it to new territories, is now the jewel within this luxury spa resort.  The richly textured teal velour seated restaurant resides in the main building, and following it’s interior uplift at the beginning of this year- it’s achieved a grand entry into Michelin with it’s first Michelin star, to compliment it’s 4 AA Rosettes.

So, what can you expect in terms of gourmet selections at this 5 star luxury resort and spa.  The offering is classified as Modern British; with a variety of select seafood and meat mains; that are complimented by flavours that reflect constantly changing seasonal produce.  Whilst it maintains a staple of traditional dishes; the timely tradition of Modern British cuisine in merging sweet and bitter ingredients is bravely conducted and delivered. It’s definitely for lovers of tart, and sweet rich flavours; specifically with the precisely presented lunch and dinner discovery tasting menus.

These feature sutbtly sweet and bitter ingredients such as calve’s sweetbreads with pine and nut risotto and madeira, foie gras with strawberry cream; and Herdwick lamb with broccoli, artichoke and anchovies.   The combination of innovative flavours within the dishes may not be for traditionalist tastebuds but they arrive impeccably.

There is a prix fixe a la carte menu at lunchtime; which is unusual for the likes of such an exclusive establishment; and a six course lunch and dinner menu; that is constantly re-created with different dishes and enhanced with seasonally specific ingredients that represent the best of rural British produce.
