Cognac’s Heritage Kept Alive With New Michelin Entry

Hôtel Chais Monnet & Spa in Cognac has achieved global recognition in culinary expertise for the first time this year; with it’s entry into the Michelin Guide.  The amazing architecturally designed interiors combined with the classic frontage of the hotel have created a stylish enterprise that’s no less authentic than it’s setting in Cognac.  Now it’s received a Michelin star for the first time and an entry into the Michelin Guide there’s no doubt that Head Chef Marc Antoine LePage has had something to do with it.  The dishes that have been crafted and created at Foudres restaurant have re-inforced Cognac’s position as a leading location on the culinary map.

Marc Antoine Le Page has some impressive credentials. Having learnt his craft from Michelin master Philippe Vételé at Anne de Bretagne restaurant in Nantes, his career credentials span a number of luxury hotels; which include K2 palace in Courchevel and Le Cheval Blanc in St Barths.  You can witness the industrial heritage of Cognac by viewing the venue’s exquisite ageing cellars; giving it it’s unique concept across fine dining.  Located in the Monnet cooperatage – guests at the venue enter through the “Chai Cathédrale” – Cathedral Wine Cellar; which stands 9 metres high, and are invited to sample a number of multiple tasting menus, and wine pairings.

The seasonally reared and organic produce, includes farm eggs cooked at low temperature with pecorino cream, and roasted saddle of lamb.

Director of Hôtel Chais Monnet & Spa, Mr. Kader Bedjeddah, says:”It has been a tough year for hospitality and tourism, given the difficulties that Covid-19 has thrown at us, but it is bolstering to have achieved this award whilst we embark on our recovery.  A Michelin star is a very encouraging sign for our team.”
